Cabana Bar by Tilley & Wills Hotels is seeking an experienced and hands-on Hotel Manager to lead its busy hospitality operations.

Cabana Bar is a vibrant Sydney CBD destination offering quality food, beverages, functions and memorable guest experiences. This role is ideal for a confident hospitality professional who enjoys leading from the floor and developing successful teams.

Key responsibilities

- Oversee daily bar, restaurant, functions and event operations.
- Lead, train and develop managers, supervisors and frontline staff.
- Maintain a strong presence during key service periods.
- Ensure consistently high standards of service, food quality, presentation, cleanliness and safety.
- Coordinate effectively between front-of-house, kitchen, functions and management teams.
- Manage recruitment, onboarding, performance reviews, rosters, leave and timesheets.
- Ensure compliance with RSA, liquor licensing, WHS, Fair Work and relevant hospitality regulations.
- Manage budgets, wages, stock control, ordering, supplier accounts, invoices and cash-handling procedures.
- Monitor operational and financial performance and implement strategies to improve efficiency and profitability.




- Handle guest feedback professionally and maintain high levels of customer satisfaction.
- Oversee the successful delivery of functions, events, promotions and special offers.
- Support local marketing activities and maintain Cabana Bar’s brand standards.
- Conduct regular operational, safety and compliance checks.

About you
- Relevant hospitality or hotel management qualifications, or at least three years of full-time management experience.
- Previous management experience in a busy bar, restaurant, hotel or licensed venue.
- Current RSA certification.
- Solid understanding of hospitality awards, Fair Work and WHS requirements.
- Proven experience managing staff, budgets, rosters, stock and suppliers.
- Excellent leadership, communication and customer-service skills.
- Experience using hospitality point-of-sale and rostering systems.
