Restaurant Manager | 2 Hat Restaurant | Mornington Peninsula

We are seeking an exceptional Restaurant Manager for a two hatted restaurant on the Mornington Peninsula, widely regarded as one of the region's premier dining destinations, and part of the Relais & Châteaux group.

Relais & Châteaux is one of the most selective hospitality associations in the world, with membership only granted after a rigorous quality audit and inspection process. Being part of it says everything about the standard this venue holds itself to.

This is one of those rare venues where the food, wine and service are all operating at the very top of their game, and where the ownership group has invested heavily in getting the fundamentals right. The kitchen brigade and floor team are established and strong, and they're now looking for a Restaurant Manager with the drive and polish to match that level and push the guest experience even further.

The Role

You'll take full ownership of the guest journey, from the first phone call or booking confirmation through to the final goodbye at the door. That means:

Leading and developing an experienced floor team, setting the standard for service at a two hat level

Managing the day to day commercial performance of the restaurant, including labour, cost control and revenue

Working closely with the culinary team to ensure food and wine are presented and matched with real expertise

Curating and evolving the guest experience so every visit reflects the calibre of the venue

Acting as the face of the restaurant, building relationships with regulars, VIPs and industry contacts

It's a mostly daytime operation,



trading two nights a week through summer and one night through winter. That gives you real structure and a genuine quality of life that's hard to find at this level of venue.

About You

You're a genuine restaurateur, not just a manager. You think about the business like an owner would, and you're driven to keep pushing standards higher even when things are already running well.

This is a restaurant with real ambitions to keep climbing, and they want someone who shares that hunger and won't settle for where things sit today.

You'll have:

Proven experience running the floor at a hatted venue

A strong commercial head, comfortable owning P&L;, labour and cost outcomes

Real depth of food and wine knowledge, not just service polish

A genuine interest in the hatted dining scene, you eat at this level regularly and know what good looks like

The confidence to walk in and own the room from day one, while respecting the structure and people already in place

Candidates coming from strong, well structured environments will be highly regarded. Experienced Assistant Restaurant Managers with the right values and ambition are also encouraged to apply.
