Roca Restaurant Byron Bay is seeking chefs for a number of roles, including a chef de partie and a breakfast chef. Prospective candidates must possess an incredible passion for South American cuisine, to oversee an exciting new chapter at our iconic landmark.

The successful applicant will join our Latin fusion family, and possess a degree of autonomy, enjoying an open dialogue with the head chef to provide exciting suggestions and ideas to help push the business forward.

Duties and responsibilities will depend on the position applied for, and will include but not be limited to:
Cooking a range of a la carte dishes as directed by the head chef, within recent and exciting contemporary menus, based on price, availability and market seasonality, in-keeping with our Latin fusion concept
Working in conjunction with the head and sous chef to assist in providing a curated range of canape, platter and degustation menus, focusing on local, seasonal produce with a Latin twist
Monitoring stock control by following wastage minimization strategies




Ensuring optimum levels of cleanliness; following periodic cleaning schedules and adhering to all OH&S; practices
Engage in the training of recent dishes, techniques and standards conducted by the head chef
Be skilled in preparing and grilling high quality steak and seafood using Argentinian cooking methods

Prospective applicants must possess the following attributes to be considered:
Hold a minimum of 5 years experience in the respective role for which they are applying
Possess chef training and qualification paperwork from an accredited body (domestically or internationally)
Have explicit communication skills and a strong command of the English language
Be able to work under pressure during demanding services
Available to work a range of hours, including evenings, weekends and public holidays
Display a positive, driven, approachable and empathetic demeanour

$65 - $80K salary based positions

Annual and sick pay included
