Vic’s Meat is looking for an experienced Terrine Maker / Charcuterie Specialist to join our production team in Mascot.

We’re looking for someone with genuine hands‑on experience producing high‑quality terrines, pâtés and traditional charcuterie. This is a specialist role for someone who understands the craft and can consistently produce an exceptional product.

About the role

You’ll be involved in:
Producing traditional and contemporary terrines and pâtés
Preparing forcemeats, fillings and meat mixtures
Working with pork, poultry, game and other premium meats
Preparing and balancing seasonings, spices, herbs and other ingredients
Grinding, mincing, mixing, emulsifying, moulding and cooking
Producing pâté en croûte and other specialty products where experienced
Following and refining recipes and production methodsMonitoring cooking temperatures, texture, consistency and finished quality
Developing new terrines, pâtés and charcuterie products
Maintaining high standards of food safety, hygiene and presentation
Sharing your knowledge and helping develop the skills of the wider team

About you





We’re looking for someone who:
Has strong experience making terrines, pâtés or traditional charcuterie
Understands forcemeat preparation, seasoning and cooking techniques
Has excellent attention to flavour, texture and consistency
Is comfortable working with different meats, ingredients and production methods
Takes genuine pride in their craft
Can work independently as well as part of a production team
Has a strong understanding of food safety and hygiene

You may come from a charcuterie, smallgoods, butcher, chef or specialist food production background . What matters most is that you genuinely know how to make exceptional terrines and pâtés.
