JRM Hospitality is partnering with a select group of premium Sydney restaurant operators to recruit experienced Restaurant Managers and Sommeliers for several exceptional dining opportunities.

The positions include an exciting new restaurant opening alongside an established destination dining environment entering its next chapter. Both businesses have serious culinary ambitions, with a focus on exceptional produce, refined service and creating memorable experiences that are worth travelling for.

We're looking for polished hospitality professionals who understand the detail required at this level - people who can deliver finesse without formality, build genuine connections with guests and work collaboratively with ambitious culinary teams.

The Opportunities

* Restaurant Manager - Take ownership of the floor, lead and develop a polished service team and work closely with senior culinary leadership to deliver an exceptional restaurant experience. Opportunities exist across both a new opening and an established premium dining operation.

* Sommelier - Join an intimate, food-led restaurant where wine forms an integral part of the guest experience. We're looking for someone with strong product knowledge, confident tableside communication and the ability to make wine engaging and approachable while maintaining refined service standards.

The Role

* Lead from the floor and set consistently high standards of service and hospitality.
* Recruit, train, mentor and develop passionate front-of-house professionals.
* Work closely with chefs and senior management to create a seamless relationship between food, wine and service.
* Build genuine guest relationships and deliver warm, knowledgeable and personalised hospitality.
* Maintain the detail,



structure and discipline expected within a premium restaurant environment.
* For management candidates, take ownership across service, rostering, training, labour and day-to-day restaurant operations.
* For wine-focused candidates, confidently guide guests through pairings and contribute to the continued development of the beverage experience.

About You

* Previous experience within premium, hatted or comparable chef-led restaurants will be highly regarded.
* Restaurant Managers will bring proven experience leading refined service teams and driving standards from the floor.
* Sommeliers will have strong wine knowledge, excellent communication skills and experience delivering thoughtful wine service and pairings.
* Polished and professional, while understanding that exceptional hospitality should still feel warm and natural.
* Comfortable working alongside ambitious chefs and contributing to a restaurant with reliable culinary aspirations.
* Strong attention to detail and a genuine understanding of the complete guest journey.
* Reliable transport and flexibility will be advantageous due to the destination nature of some opportunities.
* Full Australian working rights are essential.
