We are seeking an exceptional Food & Beverage Director to lead the strategy, commercial performance and guest experience across our restaurant, cellar door, events and functions, and the soon-to-open 33-room luxury hotel. Reporting to the General Manager, this is a high-impact leadership role with accountability for revenue, profitability, service excellence, people capability and operational performance.

Your Opportunity

You will lead a talented Food & Beverage team and bring together commercial discipline, operational excellence and an uncompromising commitment to the guest experience.

You will set the strategic direction for the division, drive sustainable growth and cultivate a high-performing, sales-focused culture that confidently places wine at the centre of every guest interaction.

What You Will Lead

- Develop and deliver the Food & Beverage strategy, annual plans, budgets and performance targets.

- Drive revenue, profitability, visitation, average spend and repeat engagement.

- Oversee the restaurant, cellar door, events and functions, ensuring exceptional service, presentation and product quality.

- Elevate the guest journey to create a seamless and distinctive Levantine Hill Estate experience.

- Lead menu, beverage, pricing and promotional strategies aligned with our wine objectives.

- Build team capability in wine knowledge, storytelling and confident, guest-focused selling.





- Take ownership of divisional budgets, financial controls and profit-and-loss performance.

- Lead, coach and develop Food & Beverage managers and teams.

- Strengthen systems, productivity, governance, safety and regulatory compliance.

- Contribute as a collaborative and influential member of the senior leadership team.

About You

You are an accomplished and commercially astute hospitality leader who knows how to turn a clear vision into exceptional performance.

You will bring:

- Substantial senior leadership experience within premium Food & Beverage, luxury hospitality, hotels, wineries or a comparable environment.

- Proven success leading complex or multi-outlet hospitality operations.

- Strong commercial acumen with experience in strategy, budgeting, forecasting and profit-and-loss accountability.

- A track record of building capable leaders and high-performing teams.

- A genuine passion for luxury service, quality and attention to detail.

- Excellent communication, planning, analytical and stakeholder management skills.

- Calm, confident and solutions-focused decision-making.

- A current Responsible Service of Alcohol certificate.

- Australian permanent residency or citizenship.
