Venue Manager – Restaurant & Bar | Full Time

Rooftop on Central is seeking an experienced and hands‑on Venue Manager to lead the day‑to‑day operations of our busy restaurant and bar in Gregory Hills.

This is a full‑time position suited to an experienced hospitality professional who is confident leading a team, managing service, driving venue performance and maintaining high standards across all areas of the business.

As Venue Manager, you will take ownership of the venue’s daily operations and work closely with ownership and management to ensure the venue runs efficiently, professionally and profitably.

Key Responsibilities

- Oversee the day‑to‑day operations of the restaurant and bar

- Lead, manage and motivate the front‑of‑house and bar teams

- Manage staff rosters, staffing levels and labour costs

- Ensure a consistently high standard of customer service

- Oversee opening and closing procedures

- Manage busy weekend and event services

- Monitor staff performance, training and workplace standards

- Drive sales, upselling and overall venue performance

- Manage stock levels, ordering and stock control

- Ensure RSA, WHS and licensing requirements are followed

- Handle customer enquiries, feedback and complaints professionally

- Work closely with kitchen, bar and event teams to ensure smooth service

- Assist with functions, events and entertainment nights

- Maintain presentation, cleanliness and operational standards throughout the venue





- Report directly to ownership/management regarding venue performance, staffing and operational matters

About You

To be successful in this role, you will have:

- Minimum 3 years' experience as a Venue Manager or in a comparable hospitality management role

- Robust experience within a restaurant, bar or high‑volume hospitality venue

- Proven leadership and staff management experience

- Strong understanding of bar and restaurant operations

- Excellent communication and customer service skills

- Confidence managing busy services and resolving issues quickly

- Strong organisational and time‑management skills

- A hands‑on management style and willingness to lead from the floor

- Current NSW RSA

- Strong understanding of compliance, licensing and workplace procedures

- Availability to work weekends, evenings and key trading periods is essential
