Head Barista & Espresso Bar Manager — Specialty Coffee

This is leadership with your hands on the machine for a highly motivated individual. You will have creative control over the bar's direction and a real say in how things are run. As Head Barista at Numero Uno, you'll set the standard, running the bar day to day, and shaping the culture of our espresso program from the ground up. This isn't a "manage from the sidelines" role: you'll be rostered on shifts, working alongside the team, while also collaborating with influencers and complementary local businesses to grow our presence. You'll have a genuine voice in the business and report directly to the Director. Your ideas won't just be heard, they'll shape where we go next.

Key responsibilities

Work shifts as Head Barista, setting the bar for quality, consistency and pace

Bring an operator's eye to the final renovation stages, layout, flow, functionality

Own daily operations: service standards, rostering, stock, guest experience

Build a team that makes people feel welcome, whether they're grabbing a filter coffee or staying an hour

Manage costs, margins and reporting, with clear numbers for the Director

Design and launch paid coffee experiences, tastings, cuppings, events

Bring our specialty line and microlots to the menu, story and all





Source a food professional to build a seasonal toastie style menu that pairs with the coffee

Find and manage the right social media talent to grow our presence

Weave the story of our roastery, espresso bar and dropshipping platform into the venue

About you

Proven experience running or managing a cafe or hospitality venue

Active, high level specialty coffee skills, confident on high volume espresso and filter, not just familiar with it

A track record of building current revenue: events, partnerships, collaborations

An eye for talent, and the confidence to source and manage external collaborators

Strong food and coffee pairing instincts

Solid financial literacy, rostering, margins, stock control, reporting

A genuine love of hospitality and knowing how to make people feel at home

We roast and supply specialty coffee to cafes across Sydney, and run a dropshipping platform that helps customers launch their own coffee label. Now we're turning our own espresso bar into the beating heart of it all. We're a specialty coffee roaster and espresso bar in St Peters, steps from Newtown, and we're rebuilding it into a destination filter focused, with a sightline straight into our working roastery.
