Job Description
The Trustee for MRKC Family Trust, trading as Mark and Vinny’s, is recruiting suitably qualified and experienced Cooks to support its kitchen operations at its vibrant and contemporary venue in Surry Hills, NSW 2010. Mark and Vinny’s is renowned for its bold approach to modern Italian cuisine, featuring an inventive menu that blends classic comfort with playful creativity — including famous vegan carbonaras, artisan blue spirulina pasta, and a distinctive culinary identity that has built a loyal cult following across Sydney. The successful candidates will contribute to the preparation and execution of high-quality, inventive dishes, maintain exceptional food quality and visual presentation standards under pressure, comply strictly with food safety requirements, and work collaboratively within a rapid-paced, qualified kitchen team.
These are permanent, full-time positions located in Surry Hills, NSW 2010. Remuneration will range from AUD $75,000 to $85,000 per annum, plus superannuation, depending on the position offered and the successful candidate’s qualifications, skills, and relevant experience.
SCOPE OF THE ROLE:
- Overseeing daily kitchen operations, including staff delegation, stock rotation, and maintaining accurate records.
- Preparing and cooking a variety of dishes, either regularly or for special functions and events.
- Managing production schedules and staff requirements to ensure timely service delivery.
- Estimating food supply needs, calculating costs for ingredients, and managing orders accordingly.
- Inspecting supplies, equipment, and work areas to ensure adherence to established quality standards.
- Analysing recipes and advising prices to menu items based on food, labour, and overhead costs.
- Working closely with team members to execute established recipes and menus with consistency and precision, ensuring alignment with seasonal availability and anticipated customer volume.
- Demonstrating new cooking techniques and introducing equipment to staff for continual culinary improvement.
- Oversee workstation readiness by ensuring mise en place is complete, equipment is functional, and kitchen operations are primed for service efficiency and food quality standards.
- Prepare and cook dishes in strict compliance with food safety and health regulations, ensuring the highest quality and hygiene standards are maintained.
- Assist in onboarding, training, and supervising new team members, providing guidance and fostering a collaborative, efficient work environment.
- Monitoring and enforcing sanitation practices to ensure compliance with health and safety regulations, including
- Occupational Health and Safety (WHS) and HACCP.
TO BE CONSIDERED FOR THIS ROLE, YOU SHOULD:
- Hold a Certificate III or IV in Commercial Cookery (or an equivalent culinary qualification / relevant industry experience).
- At least 2+ years of professional work experience as a Cook in a similar high-volume or contemporary dining setting.
- Demonstrated expertise or experience in modern Italian cuisine, pasta preparation, and high-volume prep workflows is highly desirable.
- Good working knowledge of Occupational Health and Safety (WHS), food hygiene protocols, and HACCP compliance.
- Proven ability to perform in fast-paced, operationally demanding environments under pressure.
- Strong organizational skills, communication capabilities, and a collaborative team mindset.
- Availability for mornings, evenings, weekends, public holidays, and the ability to work split shifts as required by operating schedules.
- Be willing to relocate to Surry Hills / Sydney if currently based interstate or in another city.
- Must hold valid Australian work rights at the time of application.
