Noẽma is the latest concept from Lucas Collective, bringing a fresh take on contemporary Mediterranean dining to Melbourne’s CBD. Inspired by modern Greek cuisine, the menu will celebrate exceptional produce, bold flavours and the theatre of Josper-grilled cooking, all within a striking new venue spanning a main dining room, intimate basement and private dining spaces.

Noẽma is a restaurant being created from the ground up, and this is a rare prospect to join from the very beginning - helping shape the team, culture and guest experience that will define Noẽma from day one.

About the Opportunity

We’re looking for passionate Sommeliers to join Noẽma’s opening team. This hands‑on role focuses on exceptional wine service, cellar management and creating memorable guest experiences.

You’ll work alongside Loïc Avriland Yuki Hirose, Group Head Sommelier, who lead Lucas Collective’s wine programs across the group.

Grow your wine knowledge, develop your career and help shape Noẽma’s wine experience from day one.

The Ideal Candidate





- Previous experience as a Sommelier or Junior Sommelier in a quality or premium dining environment
- Genuine passion for wine and hospitality
- Exceptional guest service and wine presentation skills
- Strong communication, organisation and time management
- Knowledge of cellar, stock and inventory management
- Keeps up to date with wine and industry trends
- Adaptable and confident in high‑pressure service
- Ability to build robust relationships with guests and team members
- WSET or similar qualification highly regarded
- Victorian RSA certificate
- Full-time availability, including weekends, public holidays and opening/closing shifts
