This is the person who runs the room and owns the result. You'll lead every service, set the standard for how guests are looked after, and be accountable for what the store makes. Rosters, ordering, stock, compliance, open and close. But in a venue this size the manager isn't in an office, they're on the floor greeting people, reading the room and showing the team how it's done.

Key responsibilities

- Roster tight to the trade rather than to habit, knowing what different days actually need
- Monitor labour as a percentage of revenue weekly
- Know where the margin is across bottle shop versus bar, wine versus food
- Run tight on stock, ordering to par, managing wastage and breakage
- Protect revenue through takeaway bottles, events and workshops
- Read daily numbers and act in the same week
- Build a team that can identify and treat members and first-time guests appropriately
- Own trading numbers including walk-in conversion, email sign-ups, repeat visits, and sales across bar and bottle shop
- Line manage the floor and kitchen team
- Work evenings and weekends when Crown St comes alive

About you

- You've managed a venue before, such as a small bar, restaurant, or bottle shop with a bar attached,



where you were properly in charge
- You've been accountable for a P&L;, or a big chunk of one
- You can read a roster against a revenue line and say what should change
- You're comfortable running lean and can hold a roster tight while keeping a team properly busy without tipping into pressure
- You know your COGS, wastage and labour percentage without having to look them up
- You lead from the floor, pouring, greeting and selling alongside your team
- You're good with people: hiring, training, and having difficult conversations early
- Current RSA and across licensing and compliance for a NSW venue
- You're happy working evenings and weekends
- Wine knowledge is a bonus, not the point
