Assistant Bar Manager – Beverly Rooftop (South Yarra)

Beverly Rooftop is looking for an experienced Assistant Bar Managerwith a strong cocktail backgroundand a genuine passion for premium service. This is a hands-on leadership role for someone who thrives on busy services, sets high standards, and knows how to build a strong bar culture through trainingand consistency.

What you'll be doing

n

n
- Supporting the Bar Manager in the day-to-day running of the bar operation
n
- Managing stock control, ordering, & stocktake
n
- Leading from the front during service: speed, quality, composure, and guest engagement
n
- Delivering a high-level cocktail offering: classic execution + modern technique
n
- Driving cocktail consistency through recipes, specs, prep, garnish and service standards
n
- Training and mentoring bartenders and FOH team on cocktails, spirits, upselling and service
n
- Assisting with ordering, stock control, weekly stocktake, wastage control and par levels
n




- Helping manage rosters and break planning to keep the bar flowing
n
- Ensuring compliance across RSA, safety, cleanliness and equipment care
n
- Contributing to menu development, seasonal features and event activations
n

What we're looking for

- Proven experience as a senior bartender / bar supervisor / assistant bar manager
n
- Strong cocktail knowledge is essential(balanced builds, technique, prep, speed + accuracy)
n
- Confident leading a team in a high-volume, premium venue
n
- Strong organisation and attention to detail (mise en place is non-negotiable)
n
- Excellent communication and a calm, solutions-focused approach under pressure
n
- Passion for hospitality, guest experience, and building team culture
n
