Star Lane Vineyard, a boutique cool-climate estate in the foothills of the Victorian Alps near Beechworth, is looking for an Assistant Winemaker to join our small team. This is a hands-on role ideal for someone who wants real ownership over the winemaking process. You'll work closely with the winery owner and winemaker across the full production cycle, from vineyard through to bottle.

About the role The role will include, but is not limited to:

· Planning, supervising and coordinating wine production from grape intake through fermentation, maturation, blending and bottling.

· Assessing grape maturity, quality, sugar and acid levels to determine suitability for processing and optimal harvest timing.

· Coordinating crushing, pressing, juice clarification and other vintage operations, including directing cellar and seasonal winery workers.

· Monitoring and controlling fermentation through laboratory analysis, sensory evaluation and adjustment of relevant production parameters.

· Developing wine styles and preparing blends to achieve the required flavour, aroma, colour,



structure and overall quality.

· Supervising wine maturation, storage, racking, filtration, stabilisation and

· or quality concerns.

· Maintaining accurate production and compliance records while ensuring food safety, hygiene, environmental and workplace safety requirements are met.

Skills

· The following are the skills that we are looking for in successful candidates:

· At least three years of full-time Wine Maker experience.

· A relevant tertiary qualification in Science, Viticulture and Oenology or a related discipline is preferred.

· Robust knowledge of grape processing, fermentation, maturation, blending and bottling.

· Experience in laboratory analysis, sensory evaluation, and quality control

· Strong leadership, organisation, communication and record-keeping skills, with knowledge of winery hygiene, food safety and workplace safety requirements.

Pay: $75,000.00 – $80,000.00 per year
