About the role The Assistant Head Sommelier plays an important role in bringing the wine program at Vito's to life. Working closely with the Head Sommelier, you'll help deliver a wine experience that is knowledgeable and considered, while still feeling fun, generous and approachable. This is a hands-on role for someone who loves being on the floor, building relationships with guests and developing a team around great wine and hospitality.

Key responsibilities

- Deliver warm, confident and engaging wine service throughout each service.

- Guide guests through the wine list, making thoughtful recommendations based on their tastes, occasion and budget.

- Have a solid understanding of Italian wine, alongside Australian and international producers.

- Support the Head Sommelier with wine list development, purchasing, pricing and maintaining the overall direction of the wine program.

- Maintain an organised cellar, accurate inventory and appropriate stock levels.

- Assist with stocktakes, beverage costs, wastage and overall wine profitability.





- Build relationships with regulars and create personalised experiences that encourage guests to return.

- Train and develop the FOH team, building their confidence and knowledge around wine.

- Drive wine sales through genuine hospitality rather than aggressive upselling.

- Work closely with the kitchen and restaurant leadership team to develop pairings, specials and wine-focused experiences.

About you

- Passionate about wine, with understanding that hospitality comes first.

- Ability to read a table, have a conversation and make great wine exciting without making it intimidating.

- Organised, commercially minded and comfortable working in a busy restaurant environment.

- Enjoy developing others and want to contribute to building a wine program that becomes a genuine part of Vito's identity.

- Previous sommelier experience is required.

- Strong knowledge of Italian wine and producers highly regarded.

- WSET, CMS or equivalent qualifications are welcomed.
