Arthur Bakery Pty Ltd, trading as Arthur Bakery, is seeking a qualified and experienced Baker to join our production team. This is a full-time, ongoing position involving the preparation and production of artisan breads, long-fermentation doughs, sourdough products, laminated pastries and other specialty bakery products. The successful applicant must be able to manage all stages of the baking process while maintaining high standards of quality, consistency, food safety and workplace hygiene.

Requirements:

· Relevant baking qualification or equivalent

· Strong knowledge of commercial baking techniques

· Experience producing artisan breads, sourdough and laminated pastries

· Understanding of fermentation control, dough development and hydration management

· Experience operating commercial bakery machinery and equipment

· Knowledge of food safety, hygiene and workplace safety requirements

· Ability to work independently and as part of a team

· Availability to work early mornings, weekends and public holidays where required





Responsibilities:

· Preparing ingredients and accurately measuring quantities according to the bakery’s recipes and daily production schedule.

· Mixing, kneading, fermenting, scaling and shaping dough for artisan breads, rolls and specialty baked products.

· Producing long-fermentation and sourdough products while controlling hydration, dough development, proofing times and fermentation conditions.

· Preparing laminated doughs and fillings for croissants, Danish pastries and other viennoiserie products.

· Monitoring proofing conditions, oven settings, baking times and product appearance to achieve consistent results.

· Managing each stage of production, from dough preparation and shaping through to proofing, baking, cooling and packaging.

· Operating commercial mixers, moulders, sheeters, ovens and other bakery production equipment.

· Assessing finished products for consistency in weight, appearance, texture and overall quality.

· Organising daily production to meet required quantities, maintain product availability and minimise ingredient waste.

· Cleaning and preparing bakery machinery, utensils, trays, tins and production areas in accordance with food safety and workplace safety procedures.

Salary: $79,500.00 per annum, excluding superannuation.

Contract type: Full time

Skills and Experience:

· At least and AQF Certificate III in Baking, or an equivalent relevant qualification.

· Minimum 2 years of relevant experience as a Baker.

· Experience with Brazilian and French bakery is essential.

· Demonstrated experience producing artisan breads, sourdough products, brioche buns and pastries.

· Strong knowledge of dough preparation, fermentation, proofing and commercial baking techniques.

· Sound understanding of food safety, workplace hygiene and quality-control procedures.

· Ability to work efficiently and maintain consistent product standards in a fast-paced bakery environment.

· Availability to work early mornings, weekends and public holidays as required.

Pay: $79,500.00 per year
