Chef de Partie

1 Hotel Melbourne | Docklands

Salary: $79,500–$81,000 per annum

At 1 Hotel Melbourne, we’re looking for a Chef de Partie who takes pride in every plate and enjoys working with a supportive, collaborative kitchen team.

You’ll take ownership of your section, preparing dishes to a consistently high standard while maintaining quality, efficiency and food safety throughout service.

What you’ll do

- Run your section confidently during preparation and service, including busy periods.
- Prepare and present dishes in line with recipes, portion standards and the direction of senior chefs.
- Monitor stock, maintain appropriate par levels and assist with ordering for your section.
- Keep your work area and equipment clean, organised and well maintained.
- Follow food safety and workplace health and safety requirements.
- Work closely with the front of house team to deliver a seamless guest experience.
- Support and guide Commis, Demi and Apprentice chefs as needed.

What you’ll bring

- A qualification in Commercial Cookery.




- At least three years’ experience in a professional kitchen; luxury hotel or restaurant experience is desirable.
- The ability to run your own section with minimal supervision.
- Strong organisation and time management skills, especially under pressure.
- A sound understanding of food hygiene and workplace safety requirements.
- A genuine passion for cooking and working as part of a team.
