About the role

GM Hotels is seeking an experienced, commercially driven Group Chef to lead the culinary operations across a group of 4 Adelaide venues on a 12-month contract. This is a genuine hands-on, on-the-tools Group Chef role. You will spend time in the kitchens working alongside venue chefs and kitchen teams, while also providing group-wide leadership across menus, food standards, kitchen operations, training, development and commercial performance.

Key responsibilities

- Working hands-on in kitchens across the group and supporting kitchen teams during service and operational periods
- Leading, coaching and developing Head Chefs, Sous Chefs and kitchen teams
- Developing and implementing new menus and seasonal offerings
- Menu planning, recipe development and accurate food costing
- Maintaining robust GP performance and identifying opportunities to improve profitability
- Establishing consistent food standards, recipes, portion control and presentation across venues
- Supporting venue renovations and kitchen redevelopment projects
- Developing function, event and high-volume menus
- Working alongside suppliers to ensure quality, pricing and consistency
- Assisting with recruitment, training and development of kitchen staff

About you

- Strong hands-on commercial kitchen experience
- Experience leading a busy kitchen team or multiple kitchen operations




- A strong understanding of menu development, recipe costing and GP management
- Experience with functions, events and high-volume hospitality
- Proven leadership and team development skills
- The ability to coach and develop chefs through practical, hands-on leadership
- A creative approach to food while maintaining strong commercial discipline
- Excellent organisational and communication skills
- The ability to manage multiple venues, projects and competing priorities
- A strong understanding of food safety, hygiene and kitchen compliance
