Skilled Meat Workers and Production Workers: permanent roles in beef, lamb and pork processing across regional NSW, Victoria and WA

We're hiring: multiple positions across slaughter floor, boning room, packing and production

About us

Biro Strategy is collaborating with regional businesses across Australia to bridge skill gaps and facilitate long-term employment opportunities. On this occasion we are recruiting for established meat processors in regional NSW, Victoria and Western Australia, each critical to the smooth functioning of the red meat and pork supply chain. Standard working terms and conditions are based on the Meat Industry Award and industry sector standards, with competitive pay rates.

The opportunity

We are seeking experienced Slicers, Boners, Slaughterers, Knifehands and Butchers, along with Production Workers for packing, load-out and general plant roles. These are permanent, full-time positions in high-throughput export-accredited plants processing beef, lamb and pork. The work suits people with proven knife skills who want a secure, long-term role in a regional town, and production workers who want to learn a trade on the floor.

Key responsibilities - Slicers, Boners and Knifehands

- Boning, slicing and trimming beef, lamb and pork carcases and primals to specification
- Working on chain and table systems to meet daily production and yield targets
- Maintaining knife sharpness and correct use of protective equipment
- Following cut specifications, quality and hygiene standards
- Working safely in chilled environments and rotating through tasks as required

Key responsibilities - Slaughterers

- Slaughter floor operations including sticking,



legging, hide removal, evisceration and splitting
- Working to animal welfare, halal (where applicable) and food safety requirements
- Operating slaughter floor equipment and tools safely
- Meeting throughput targets while maintaining carcase quality

Key responsibilities - Butchers

- Breaking down carcases and primals into retail and export cuts
- Portioning, trimming and value-adding to customer specifications
- Supporting the boning room and further processing areas as required

Key responsibilities - Production Workers

- Packing, labelling, weighing and cartoning product on the production line
- Load-out, cold store and forklift work where ticketed
- Offal, rendering and by-product processing
- Cleaning, sanitation and general plant support
- Following food safety, hygiene and WHS procedures at all times

About you

- Certification and Experience: For skilled roles, previous experience in a commercial meat processing plant with competent knife skills in beef, lamb or pork. A Certificate II or III in Meat Processing is an advantage but not essential. For production roles, experience in food processing, manufacturing or agriculture is welcome, and a forklift licence is a plus.
- Technical Skills: Knife handling, cut specifications,



yield awareness and an understanding of food safety and hygiene in an export plant.
- Soft Skills: Reliable, physically fit, able to work in chilled environments and at pace, and able to work well in a diverse team.
- Adaptability and Learning: Willing to rotate through tasks, learn new cuts and take on training toward higher-skilled roles.
- Licences and Certifications: Reliable transport to and from work. Forklift licence and Q Fever vaccination are an advantage and can be arranged.

What is offered

- Salary from $70,000 to $85,000 plus superannuation, depending on role and experience, with overtime and penalty rates where applicable

Additional information

- Roles involve early starts and rotating shifts in plants operating five to six days a week, with overtime available
- Prior to commencement, a pre-employment functional assessment, drug and alcohol testing and Q Fever vaccination are required
