About the kitchen

Darling Glebe is a historic casual elegant restaurant in Glebe. The food is classic French at the core, seasonal, produce driven and disciplined, but still enjoyed. Small team, serious standards, clean systems.

Led by Jeff Schroeter (Savoy London, Royalton NYC, Bistro Moncur).

The role

This is a working Sous position. You’ll be on the tools every day, supporting service and helping keep the kitchen organised and calm.

You’ll work directly with the Head Chef, sharing the service responsibilities and sections.

What you’ll be doing

- Working evenings Wednesday to Sunday
- Running a section cleanly and consistently
- Being fully hands on during prep and service
- Supporting service flow and standards
- Helping with ordering, stock control and prep planning
- Training and supporting commis and CDPs
- Stepping up to run service when required
- Help keeping the kitchen clean, organised and professional

What we’re looking for





- Experienced chef who wants to cook again, a CDP ready to step up, or a Junior Sous already in the role
- Solid basics and good knife skills
- Calm under pressure, no ego, no drama
- Organised, reliable and switched on
- Cares about consistency and doing things properly
- Certificate III in Commercial Cookery (or equivalent)
- Australian work rights
