Hunter Street Hospitality is bringing together the opening team for Shokunin, our newest Japanese dining destination at Hamer Hall, Melbourne.

Named after the Japanese philosophy of the craftsperson, Shokunin is all about dedication to technique, respect for ingredients and the constant pursuit of better.

Inspired by the relaxed energy of a Japanese izakaya and the precision and intimacy of kappo dining, Shokunin will be a place where seriously good Japanese food meets warm hospitality, great drinks and a strong sense of craft.

We’re looking for Sushi Chefs and Chef de Parties who take pride in their craft.

The roles

We’re looking for experienced chefs who are passionate about Japanese cuisine, quality produce and working as part of a high-performing opening team.

For both Sushi Chef and Chef de Partie roles, versatility is key. You’ll be expected to confidently operate across our kitchen sections, including:





- Sushi & preparation
- Larder / cold section
- Fryer
- Pan / hot section
