The MiTCH (operated by Rum Rebellion Hospitality Group Pty Ltd, ABN 23 609 890 217) is a community-focused hotel and full-service dining venue at 50-52 Mitchell Road, Alexandria, Sydney NSW 2015.

We are seeking a skilled, qualified Chef de Partie to join our kitchen brigade on a full-time, ongoing basis.

Pay: Hospitality Industry (General) Award 2020, Cook Grade 3 or Cook Grade 4 depending on experience ($29.45 to $31.30 per hour base rate), plus superannuation and applicable penalty rates for evenings, weekends and public holidays.

Duties and responsibilities

- Run an assigned section of the kitchen (grill, larder, pans or pastry) during service, producing dishes to spec and on time
- Prepare, cook and present menu items to The MiTCH's quality and presentation standards
- Complete mise en place and prep lists for your section and maintain par levels
- Support the Head Chef and Sous Chef with specials, current dishes and seasonal menu changes
- Maintain food safety,



hygiene and HACCP records for your section in line with NSW food safety and WHS requirements
- Assist with stock rotation, supplier deliveries and stocktakes
- Guide and support apprentices and kitchen hands working on your section

Requirements

- Trade qualification in Commercial Cookery (Certificate III/IV or equivalent) or demonstrated equivalent experience
- Minimum 2 years' experience in a commercial full-service kitchen
- Ability to run a section independently during a busy pub service
- Full working rights in Australia OR eligibility for employer sponsorship
- Availability across evenings, weekends and public holidays
