Alfonsino’s Darwin is a busy Italian restaurant seeking experienced and passionate professionals for the following positions:

1. COOK

The successful applicant will prepare and cook traditional Italian antipasti, pasta, wood-fired pizza, main courses and desserts while maintaining Alfonsino’s high standards of quality and consistency.

Responsibilities

- Inspect ingredients to ensure freshness and quality.
- Regulate the temperatures of ovens, grills and other cooking equipment.
- Prepare, season and cook food according to established recipes.
- Prepare pizza dough, pasta, sauces, antipasti, meat, seafood and desserts.
- Operate the wood-fired pizza oven safely and effectively.
- Portion and plate food, adding sauces and garnishes.
- Maintain consistent quality, flavour, presentation and portion sizes.
- Store food in temperature-controlled facilities.
- Follow stock rotation, labelling and food-storage procedures.
- Prepare meals for customers with allergies and special dietary requirements.
- Maintain a clean, safe and organised kitchen.
- Assist with menu planning and estimating food requirements.
- Assist with training junior kitchen staff and apprentices.

Requirements
- Cert iii in Commercial cookery or above
- A minimum of one year of relevant experience in a commercial kitchen.
- Experience preparing authentic Italian cuisine.
- Experience preparing pasta, pizza, sauces and traditional Italian dishes.
- Strong knowledge of food-safety and hygiene requirements.
- Excellent attention to detail and a commitment to consistency.
- Ability to work efficiently under pressure.
- Ability to work effectively as part of a kitchen team.
- Availability to work evenings, weekends and public holidays.

Employment: Full-time, permanent Hours: 38 hours per week

Salary: $68,000–$80,000 per annum plus superannuation, depending on qualifications and experience.

1. CHEF

The successful applicant will plan, organise and participate in the preparation and cooking of traditional Italian antipasti, pasta, wood-fired pizza, main courses and desserts.

Responsibilities

- Plan menus in consultation with restaurant management.
- Estimate food and labour costs.
- Order food supplies and monitor stock levels.
- Inspect ingredients to ensure freshness and quality.
- Monitor the quality of dishes throughout preparation and presentation.
- Prepare and cook authentic Italian dishes.
- Prepare pasta, pizza dough, sauces, meat, seafood and desserts.
- Maintain consistent portion sizes, presentation and flavour.
- Discuss food-preparation matters with management and kitchen staff.
- Demonstrate cooking techniques and advise staff on cooking procedures.
- Develop and improve recipes and menu items.
- Prepare food for customers with allergies and special dietary requirements.
- Enforce food-safety, hygiene and workplace-safety requirements.
- Manage food storage, stock rotation and waste control.
- Select, supervise and train kitchen staff and apprentices.




- Maintain an organised and efficient kitchen during busy services.

Requirements
- Certificate iv or diploma-level qualification in commercial cookery or an equivalent relevant qualification.
- A minimum of one year of relevant experience as a Chef.
- Demonstrated experience in a busy commercial restaurant.
- Strong knowledge of Italian cuisine and traditional cooking techniques.
- Experience preparing pasta, wood-fired pizza and other Italian dishes.
- Strong leadership and kitchen-management abilities.
- Excellent attention to quality, presentation and consistency.
- Sound knowledge of food-safety, hygiene and stock-control procedures.
- Ability to manage priorities and work effectively under pressure.
- Availability to work evenings, weekends and public holidays.

1. CAFÉ OR RESTAURANT MANAGER

The successful applicant will coordinate front-of-house operations, supervise employees and ensure that customers consistently receive high standards of food and service.

Responsibilities

- Plan and organise the restaurant’s daily operations.
- Plan menus in consultation with the Chef.
- Plan and organise special functions and group bookings.
- Manage reservations and coordinate table allocations.
- Greet customers and assess their dining requirements.
- Arrange the purchasing and pricing of food, beverages and other supplies.
- Monitor stock levels and maintain inventory records.
- Control operational costs and assist with restaurant budgets.
- Prepare staff rosters and allocate duties.
- Select, train and supervise waiting and kitchen-support staff.
- Monitor employee performance and service standards.
- Ensure that the restaurant complies with health, food-safety and hygiene regulations.
- Ensure compliance with liquor-licensing and workplace-safety requirements.
- Manage customer enquiries, feedback and complaints.
- Assess customer satisfaction and implement service improvements.
- Maintain high standards of restaurant presentation and cleanliness.
- Maintain financial and operational records.
- Process payments and balance daily transactions when required.
- Assist with service during busy periods.

Requirements
- A diploma or higher qualification in hospitality management, business management or a related discipline.
- A minimum of 1 year of relevant restaurant-management experience.
- Demonstrated experience managing a busy restaurant.
- Experience supervising, rostering and training staff.




- Strong leadership and team-management abilities.
- Excellent communication and customer-service skills.
- Experience with stock management, purchasing and cost control.
- Knowledge of food-safety, liquor-licensing and workplace requirements.

1. WAITER

Alfonsino’s Darwin is seeking an experienced, professional and customer-focused Waiter to join our front-of-house team. The successful applicant will provide attentive table service, explain our Italian menu and ensure that customers receive a welcoming and memorable dining experience.

Responsibilities

- Welcome customers and escort them to their tables.
- Present menus and beverage lists.
- Explain menu items, ingredients and daily specials.
- Provide recommendations regarding food and beverages.
- Take food and beverage orders accurately.
- Communicate customer orders to kitchen and bar staff.
- Serve food and beverages professionally and efficiently.
- Open bottles and pour beverages.
- Check customer satisfaction during meals.
- Respond appropriately to allergies and special dietary requirements.
- Clear tables and return dishes and cutlery to the kitchen.
- Prepare tables with linen, cutlery, glassware and condiments.
- Prepare the restaurant before service and complete closing duties.
- Present accounts and process customer payments.
- Assist with reservations and table allocations.
- Maintain the cleanliness and presentation of the dining area.
- Comply with responsible-service-of-alcohol requirements.
- Assist with training junior front-of-house staff when required.

Requirements
- A relevant hospitality qualification is desirable.
