A TASTE OF FLINDERS

Whitemark

Outscape Flinders Island, Tasmania

We’re looking for a chef to join the small team behind Outscape — a new way of experiencing Flinders Island through landscape, people, stories and food.

What we cook is shaped by what is happening around us — the season, the weather, the tides and what our island producers have available.

You’ll work as part of a small kitchen team, alongside our Creative Director of Food, Darren Purchese, bringing the food of Outscape to life for our guests.

The food

Our approach is generous, thoughtful and grounded in Flinders Island.

We want to celebrate the produce that belongs here — local beef and lamb, wallaby, seafood, vegetables, herbs, fruit and the things that grow naturally around us.

We believe in using ingredients well, making the most of whole animals and whole catches, working with secondary cuts, preserving abundance when the season gives it to us, and building genuine relationships with the people who grow, catch and produce our food.

There will be structure, menus and standards, but there also needs to be room to respond to the island.

That’s part of the job.

The role

You’ll be part of the everyday rhythm of Outscape, preparing beautiful food for small groups of guests staying with us on multi-day experiences.

Because our kitchen team is small, this is a hands-on role. Everyone contributes, everyone notices the details, and everyone plays a part in creating the experience around the table.

The role will include

- Working alongside Darren to deliver and continue developing The Flavours of Outscape

- Preparing breakfasts, lunches, dinners and provisions for our guests

- Working confidently with local and seasonal produce

- Helping with ordering, purchasing, stock and kitchen organisation

- Building solid relationships with island growers, producers and suppliers

- Maintaining excellent food safety, cleanliness and kitchen standards

- Reducing waste and finding thoughtful ways to use ingredients completely

- Contributing ideas as the Outscape food program continues to evolve

- Working closely with our guides, hosts and operations team to create a seamless guest experience

The level of responsibility within the role will depend on your experience.

Some days will be beautifully organised.

Some days the weather, the boat, the producer or the island will change the plan.

You need to enjoy both.

Who we’re looking for

We’re open to hearing from people at different stages of their cooking career.

You might be an experienced cook ready for your next step, a qualified chef looking for somewhere to grow, or a more senior chef wanting greater responsibility and ownership.

We’re less interested in a long list of famous kitchens than we are in finding the right person — someone who cares deeply about food, people and place, and who would like to build something with us over time.

We’d love to meet someone who is:

- Comfortable and capable in a professional kitchen

- Calm, organised and practical

- Generous in the way they cook and work with others

- Interested in producers, provenance and seasonal cooking

- Comfortable working as part of a small, close kitchen and wider Outscape team

- Happy to take responsibility and equally happy to pitch in

- Curious and willing to learn

- Excited by the idea of helping build something rather than simply stepping into an established kitchen

For someone who wants it, there is real opportunity to grow with the role as Outscape develops — taking on greater responsibility across the kitchen, our producers and the broader food program over time.

Above all, we’re looking for someone who understands that detail matters.

With only a small number of guests around the table, every plate, every ingredient and every interaction counts.

Life on Flinders Island

This role is based on Flinders Island in Bass Strait.

It’s a spectacular place to live, but island life is different from taking a job in a city restaurant.

There is space here. Wild weather. Extraordinary produce. Quiet roads. Beaches without crowds. A community where people know each other and where relationships matter.

For the right person, that is a very big part of the opportunity.

We welcome applications from people already on the island as well as those considering a move to Flinders Island.

About Outscape

Outscape is a hosted Flinders Island experience built around the idea that you shouldn’t simply visit a place — you should have the time to understand it.

Our guests walk, eat, explore and spend time with the island and its people over several days.

Food is not an add-on to that experience.

It is one of the ways we tell the story of Flinders Island.

If that sounds like the sort of kitchen you’d like to be part of, we’d love to hear from you.
