It's aspirational without being aloof, grounded in Queensland produce, serious grill craft, and the kind of warm, unhurried hospitality that turns a first visit into a habit.About the roleThe Restaurant & Bar Manager is responsible for leading the day-to-day operation of High Road Bar & Grill, a premium Australian restaurant and cocktail bar located within Novotel Brisbane South Bank.
This is a hands‐on leadership role for someone who enjoys being on the floor, knows how to create a great atmosphere and takes pride in delivering memorable food and beverage experiences.
The Restaurant & Bar Manager leads both the restaurant and bar teams and is responsible for service standards, guest experience, team performance, financial results and the overall presentation and reputation of High Road Bar & Grill.Key responsibilitiesLead the daily operation of High Road Bar & Grill and ensure the restaurant and bar deliver a consistently high-quality guest experienceBe a visible, hands‐on leader during service and support the team wherever requiredCreate an energetic, welcoming and professional atmosphere that reflects the High Road Bar & Grill brandLead the Restaurant Supervisor and Bar Supervisor as one team, ensuring strong communication between the restaurant, bar and kitchenEnsure service standards are consistently maintained across all shiftsMaintain high standards of cleanliness, presentation,



ambience and organisation throughout the restaurant and barDevelop strong food and beverage knowledge across the team, with a particular focus on Australian produce, Australian wines, premium spirits and cocktailsTake ownership of the commercial performance of High Road Bar & Grill and work with the Food & Beverage Manager to achieve agreed revenue, labour, cost of goods and profitability targetsRecruit, train, develop and retain a strong restaurant and bar teamBe a genuine host and ensure every guest feels welcome at High Road Bar & GrillAbout youCurrent Responsible Service of Alcohol (RSA) certificationValid RMLV, or willingness to obtain oneA minimum of 2 years' leadership experience in a premium restaurant, bar or similar high-quality food and beverage venuePrevious experience managing both restaurant and bar operationsStrong knowledge of premium food, Australian produce and modern Australian cuisineStrong knowledge and genuine interest in Australian winesGood knowledge of beer, spirits and premium cocktailsExperience managing, training and developing front‐of‐house teamsStrong commercial awareness and an understanding of restaurant and bar financial performanceA proven ability to create a positive and high‐performing team environmentAbout usHigh Road Bar & Grill is a destination venue built around premium Australian produce, a wood‐fire grill, quality wines and a strong cocktail offering.
