nPosition Summary:n
n
nResponsible for cleaning, cutting, portioning, and merchandising all boneless meat products.n
n
nEssential Functions:n
n
nCleans, trims, slices, and portions subprimals of beef, pork, lamb and veal for future processing. Inspects meat products for defects, bruises, or blemishes. Accurately reads and comprehends all customer specific instructions. Performs Quality Control checks and communicates with supervisors and managers regarding any defects. Separates meats and byproducts into specified containers and seals containers. Uses knives, cleavers, and other equipment to perform meat cutting and trimming. Weighs meats and tags containers for weight and contents. Follows the company's detailed product specifications.



Performs other duties as assigned.n

nKnowledge / Skills / Abilities:n
n
nMust have working knowledge of production equipment. Ability to portion all boneless cuts of meat in an accurate and timely manner. Ability to reduce processing costs but cutting and sizing portions accurately while continuing to meet customer specifications. Ability to problem solve in terms of trimming and product substitutions. Ability to work in a fast paced, high pressure, challenging environment Must be a team player and possess a positive attitude. Ability to effectively communicate, both written and verbally, in English. Must demonstrate the ability to understand the Meat Buyer’s Guide specifications as they relate to the company’s internal product specifications.n
