Lancemore Milawa , located in King Valley, is set at the base of the Alpine National Park and is nestled amongst award winning wineries with a backdrop of snowcapped mountains. Refurbished in 2023, and drawing inspiration from the local environment, the 40-room boutique hotel is a carefully curated space that is reimagining country luxury.

Merlot Restaurant is now looking for a Chef de Partie to join our kitchen team ensuring consistent high quality and memorable food experience for all our guests. This is a full-time position suited to a qualified chef with strong culinary skills, experience working within a professional restaurant or hotel kitchen, and the ability to take responsibility for a designated section of the kitchen.

About the role. n

n
- Prepare and cook menu items to consistently high standards.
n
- Take responsibility for the effective operation of a designated kitchen section.
n
- Complete mise en place and ensure the section is fully prepared for service.
n
- Monitor the quality, presentation, portioning and consistency of dishes throughout preparation and service.
n
- Assist with menu preparation, development and implementation.
n
- Assist with stock control, ordering and inventory management.
n
- Monitor portion control, food waste and appropriate use of ingredients.
n
- Work collaboratively with the Head Chef, Sous Chef and other members of the kitchen team.
n
- Coordinate effectively with front-of-house staff during service.
n
- Guide and support junior chefs, commis chefs and kitchen team members where required.
n
- Demonstrate appropriate cooking techniques and procedures to junior team members.
n
- Maintain food safety,



hygiene and workplace health and safety standards.
n
- Ensure kitchen equipment, work areas and storage areas are maintained to the required standards.
n
- Assist the kitchen leadership team in maintaining consistent food quality and efficient kitchen operations.
n

About you nn
- A relevant commercial cookery or culinary qualification, or equivalent relevant industry experience.
n
- A minimum of 2 years' relevant experience within a professional restaurant, hotel or comparable commercial kitchen environment.
n
- Previous experience as a Chef de Partie or in a comparable chef position.
n
- Demonstrated ability to independently manage a kitchen section.
n
- Strong food preparation, cooking and presentation skills.
n
- Sound knowledge of food safety, hygiene and safe food handling requirements.
n
- An understanding of portion control, food waste and stock management.
n
- The ability to work effectively in a busy service environment.
n
- Strong communication and teamwork skills.
n
- The ability to work a adaptable roster including evenings, weekends and public holidays.
