Job Description

The Trustee for TRINITY GROUP TRUST Full Time Chef required - Doreen and Surrounding Areas -ASAP start SHIV INVESTORS PTY LTD as trustee for TRINITY GROUP TRUST trading as Slices Doreen is seeking a highly skilled, experienced and motivated full time Chef to join its professional kitchen team at its established full-service restaurant in Doreen, Victoria. Slices Doreen operates as a busy restaurant with dine-in, takeaway, catering and function operations.

The venue offers breakfast, lunch and dinner service, with a broad menu featuring traditional Italian pasta and pizza, sharing plates, locally sourced meat dishes, fresh seafood, desserts and contemporary restaurant meals. The restaurant also supports catering and function services for private events, family gatherings and corporate occasions. Due to continued business growth and increasing demand across regular dining, takeaway, catering and event services, the business requires a full-time Chef with strong kitchen management capability.

The successful applicant will play a key role in managing daily kitchen operations, supervising kitchen staff, maintaining food quality, coordinating preparation and service, controlling stock and supporting menu development across a high-volume restaurant environment.

Task & responsibilities The successful applicant will be responsible for performing Chef-level duties, including:

Managing and coordinating daily kitchen operations across breakfast, lunch, dinner, takeaway, catering and function service.

Planning and developing menu items in consultation with management and kitchen personnel.



Preparing and cooking a wide range of restaurant dishes, including Italian pasta, pizza, sharing plates, meat dishes, seafood dishes, breakfast items, desserts and catering-style menu items.

Preparing ingredients, sauces, stocks, fillings, toppings, garnishes and other components required for daily restaurant service.

Coordinating food preparation and cooking activities during busy service periods to ensure meals are prepared efficiently and consistently. Monitoring the quality of dishes at all stages of preparation, cooking and presentation. Ensuring meals are prepared and presented consistently in accordance with restaurant standards, recipes, portion sizes and presentation requirements.

Supervising and directing kitchen staff during preparation, service and closing procedures. Training and guiding kitchen staff in food preparation, cooking methods, plating, hygiene, safe food handling and kitchen workflow. Allocating kitchen tasks to staff and assisting with preparation schedules for daily trade, peak periods, catering orders and function bookings.

Estimating food requirements, food costs and labour requirements for kitchen operations. Assisting management with food costing, portion control, stock management and reduction of food wastage. Ordering, receiving, checking and storing food supplies, ingredients and kitchen stock.

Inspecting the quality and freshness of ingredients and food products received from suppliers. Managing appropriate storage, labelling, stock rotation and safe handling of food products. Preparing dishes for dine-in, takeaway, catering and function service requirements.

Preparing dishes to accommodate dietary requirements and customer requests where required. Discussing food preparation, menu items,



service timing and operational matters with management, kitchen staff and front-of-house staff. Demonstrating cooking techniques and providing guidance to kitchen staff on preparation, cooking procedures and presentation standards.

Maintaining cleanliness and organisation of kitchen preparation areas, equipment, storage areas and workstations. Ensuring compliance with food safety, hygiene, sanitation, temperature control and workplace health and safety requirements. Contributing ideas for new dishes, seasonal menus, catering options and improvements to existing menu offerings.

Supporting the efficient operation of the kitchen and maintaining the restaurant’s standards of food quality, presentation and customer satisfaction.

Qualification & experience The successful applicant must have:

At least 3 years of full-time experience as a Chef or in a closely related skilled commercial kitchen role. Demonstrated experience managing or supervising kitchen operations in a busy restaurant environment.

A relevant qualification in Commercial Cookery, Culinary Arts, Hospitality or a related discipline will be highly regarded. Experience preparing Italian or contemporary Australian restaurant dishes will be highly regarded. Experience working with pasta, pizza, meat, seafood, breakfast items, desserts and catering-style food will be highly regarded.

Strong knowledge of food preparation, cooking techniques and commercial kitchen operations. Good understanding of menu planning, portion control, stock management, food costing and wastage control. Strong knowledge of food safety, hygiene, sanitation and workplace health and safety requirements.

Ability to supervise, train and coordinate kitchen staff during busy service periods. Strong organisational and time-management skills. Ability to work under pressure while maintaining consistent food quality and service standards.

Ability to work both independently and collaboratively as part of a professional kitchen team. Flexibility to work across a restaurant roster, including mornings, evenings, weekends and public holidays as required.
