Job Description
We are seeking a skilled and creative Chef de Partie – Pastry Chef to join our authentic French bakery. In this role, you will be responsible for preparing and presenting a range of classic French pastries, desserts, breads, and viennoiserie, ensuring every product meets the highest standards of quality and authenticity. You will also have the opportunity to learn and contribute to our sourdough bread production. You will work closely with the Head Baker to maintain the bakery's reputation for excellence and innovation.

Key Responsibilities

- Pastry Production:n n
- Prepare and bake a variety of French pastries
n
- Follow traditional French recipes and techniques, ensuring consistency and authenticity.
n
- Assist in the development of new pastry items and seasonal specials.
n
n
- Bread & Sourdough:n
n
- Support the bread team in the production of artisanal sourdough loaves.
n
- Willingness to learn sourdough techniques, including starter maintenance, fermentation, shaping, and baking.
n
n
- Quality Control:n
n
- Maintain strict adherence to food safety, hygiene, and HACCP standards.
n
- Ensure all products are visually appealing, with precise attention to detail in presentation and decoration.
n
n
- Team Collaboration:n
n
- Work as part of a cohesive kitchen brigade, supporting junior chefs and apprentices.
n
- Assist in training and mentoring new team members in French pastry and bread techniques.
n
n
- Inventory & Operations:n
n
- Monitor ingredient stock levels and assist in ordering supplies.
n
- Maintain a clean, organized, and effective workspace.
n
n
- Customer Focus:n
n
- Uphold the bakery's reputation for exceptional quality and service.
n
- Adapt to customer feedback and contribute to continuous improvement.

Skills & Qualifications
n
n
- Experience:n n
- Minimum 2+ years as a Pastry Chef or Chef de Partie in a high-volume bakery, patisserie, or fine dining environment.
n
- Experience with French pastry techniques and recipes is highly desirable.
n
- Willingness to learn sourdough bread making is essential.
n
n
- Technical Skills:
n
- Proficiency in baking, decorating, and plating French pastries and desserts.
n
- Knowledge of food safety and hygiene regulations.
n
- Personal Attributes:n
n
- Passion for French pastry and artisanal bread, with a commitment to excellence.
n
- Ability to work under pressure, manage time effectively, and adapt to a dynamic environment.

- Strong teamwork and communication skills.

- Qualifications:n

- Formal qualification in Patisserie, Bakery, or Culinary Arts (e.g., Certificate III in Patisserie, or equivalent).
n
- Australian work rights (if applicable).
