Summary
Our client Mera Albert Park is seeking to add an experienced Chef to its contemporary dining venue in the heart of Albert Park, Melbourne. The restaurant delivers an elevated dining experience focused on quality, passion and precision, combining modern culinary techniques with refined flavours. The successful Chef will support kitchen operations while maintaining consistently high standards of food preparation, presentation and service.
The typical job responsibilities will include, but are not limited to the following:
• Prepare and cook a range of dishes in accordance with established recipes and menu requirements.
• Monitor food quality throughout all stages of preparation, cooking and presentation.
• Assist with menu planning and development to maintain quality, variety and seasonal relevance.
• Estimate food requirements and assist with controlling food, ingredient and labour costs.
• Order and receive food supplies while monitoring stock levels and ingredient quality.
• Maintain consistent portion sizes, presentation standards and overall quality across all dishes.
• Coordinate food preparation activities to ensure timely and efficient kitchen service.
• Discuss food preparation and service requirements with management, kitchen and waiting staff.
• Demonstrate cooking techniques and provide guidance to junior kitchen staff when required.
• Ensure appropriate food storage, rotation,
temperature control and preservation procedures are followed.
• Maintain kitchen cleanliness and ensure equipment, utensils and work areas meet hygiene standards.
• Apply and enforce food safety, sanitation and workplace health and safety requirements.
• Assist with training kitchen staff in preparation methods, cooking procedures and presentation standards.
• Support efficient kitchen operations during busy service periods while maintaining consistent food quality.
Applicants must meet the following minimum requirements to be considered for the role:
• Minimum 12 months' recent, directly relevant experience working as a Chef in a comparable restaurant environment.
• Relevant AQF Diploma or comparable cookery qualification, or equivalent substantial directly relevant professional experience.
• Demonstrated ability to prepare, cook and present high-quality dishes consistently within a professional commercial kitchen.
• Strong knowledge of food safety, hygiene, storage, temperature control and protected kitchen operating procedures.
• Proven ability to manage food preparation priorities effectively during busy restaurant and service periods.
• Sound understanding of stock control, ingredient ordering, portion management and minimising food wastage.
• Ability to work collaboratively with kitchen, management and front-of-house staff to maintain efficient service.
• Strong attention to presentation, consistency and quality when preparing modern restaurant dishes to established standards.
