THE ROLES
Assistant Restaurant Manager. Second in command on the floor. You run service when the Restaurant Manager is off, own the roster and the labour line, lead pre-shift, and set the opening team's standards alongside the Restaurant Manager. The last seat before your own room.
Supervisor. You run the floor in real time — calling the room, closing loops with the kitchen, reading the table that needs more, and coaching the section waiters beside you through every service.
Section Wait Staff. You own a section of Sydney's most celebrated dining room from first greeting to farewell. Menu, wine and timing knowledge that lets you read a table and give it exactly what it came for.

WHY THE TRAINING RAMP MATTERS
Most openings hire a month out and open with a team that has never worked together.
We are not doing that. Every Aqua hire trains inside a live SRG venue first - Ripples, Sails, The Nielsen, Ventuno, The Fenwick, Riva. You will learn SevenRooms, our service sequence and our standards, and you will already know the people beside you.
By opening week this will not be a new team. It will be a trained team walking into a new room.
WHO WE WANT
On the floor: section waiters who know the difference between service and hospitality. You have run a section in a premium or high-volume quality room, you know your wine and your menu cold, and you read a table before it asks.
In leadership: people who have run a floor, held a standard, developed a team, and understand that labour cost and guest experience are the same conversation.

and act for the guest without waiting. That is how we work.
THE LOCATION
Milsons Point. Harbour Bridge on one shoulder, Luna Park on the other, Opera House across the water, floor-to-ceiling glass on three sides.
There are maybe five dining rooms in this city with a view like this, and none of them are building an entire floor team from scratch.
Aqua is the address people book when the occasion actually matters — the proposal, the anniversary, the deal. That means the guests are invested, the standard is high, and the service you learn here is the service that opens doors everywhere else. "Aqua Dining, opening team" is a line on your CV that Sydney operators recognise instantly.

Bill and Kathleen Drakopoulos opened Aqua in 2000. Everything else came after. Twenty-six years on, SRG is fifteen venues heading to twenty — Sydney's harbourside icons and neighbourhood favourites: Ripples, Sails, The Nielsen, The Fenwick, Ventuno, Riva, Akti, Noi, Summer Salt, and the food and beverage across The Langham, Sydney.
