Chola's Indian Restaurant is an Indian restaurant in Cranbourne West that has served Melbourne's south-east since 2018. About the Position
Chola's Indian Restaurant is looking for an experienced Chef to join its kitchen in a newly created role. The Chef reports to the Head Chef and supervises four kitchen staff. The role is responsible for preparing and presenting the restaurant's dishes to a consistently high standard across dine-in, takeaway and delivery orders. The Chef leads the kitchen team during service, manages stock and food costs, upholds food safety and hygiene standards, and helps develop new dishes and menu items.
Key Responsibilities
- Plan and prepare meals according to the restaurant's menus, recipes and portion standards.
- Cook and present dishes to a consistently high standard, checking quality and presentation before each dish leaves the pass.
- Ensure all food is fresh, safe and correctly labelled, rotated and stored.
- Maintain a clean and hygienic kitchen, including food preparation areas, cool rooms and storage areas.
- Supervise the kitchen team of four, delegating tasks and allocating duties during preparation and service.
- Monitor food stock levels and order ingredients and supplies as needed.
- Control food costs and minimise waste through accurate ordering, portion control and correct storage.
- Develop new recipes and menu items that suit the restaurant's style and its customers.
- Follow food safety regulations, the business's food safety program and workplace health and safety procedures.
- Work with waitstaff and other kitchen team members so orders are completed accurately and on time.
- Maintain kitchen equipment in good working order and promptly report any faults or maintenance needs.
Requirements
- Australian citizens and permanent residents are encouraged to apply.
- Diploma in Hospitality Management.
- At least one year of experience as a Chef.
- Sound knowledge of Indian cooking techniques, spices and preparation methods, including tandoor and South Indian dishes.
- Working knowledge of food safety regulations, HACCP principles, temperature control and hygiene record keeping.
- Ability to manage stock, place supplier orders, calculate portion costs and control waste.
- Ability to supervise, train and motivate kitchen staff and delegate tasks well in a busy kitchen.
- Strong communication and teamwork skills, with a focus on quality and the guest experience.
- Ability to stay organised and solve problems under pressure during peak service.
- Available to work a rotating roster that includes evenings, weekends and public holidays.
