About Tanuki
Tanuki is a 180-seat contemporary Japanese restaurant and bar in the heart of Double Bay. We offer a contemporary izakaya-style menu focused on fresh, seasonal ingredients, alongside a premium 6-seat sushi counter and robata grill.

Trading hours:

- Dinner: Wednesday – Sunday

- Lunch: Friday – Sunday

- Closed Monday & Tuesday

About the Role
We are seeking passionate and motivated Chefs to join our growing kitchen team. You will be part of a professional brigade delivering high-quality food in a fast-paced, premium dining environment.

We are hiring for:

- Sushi Chef (all levels – junior to experienced)

- Chef de Partie (CDP)

Sushi Chef Responsibilities

- Prepare sushi, sashimi and rolls to a high standard

- Assist with sushi prep and service, including the sushi counter

- Maintain high hygiene and food safety standards

- Work efficiently in a fast-paced environment





- Training provided for junior chefs; experienced chefs will have the opportunity to take on more responsibility

Chef de Partie (CDP) Responsibilities

- Run a section independently

- Work across grill, fry and pan sections

- Handle high-volume service

- Prepare and portion meats and seafood (filleting, carving)

- Maintain high hygiene and food safety standards

About You

- Passionate about Japanese cuisine

- Reliable, organised and team-oriented

- Able to perform under pressure in a busy kitchen

- Previous experience in a similar role (required for CDP; not required for junior sushi roles)

- Experience with charcoal, robata or open-fire cooking highly regarded

- Available to work evenings and weekends
