We are currently seeking an experienced, passionate, and hands-on Bar Manager to lead our beverage program and champion a high-performing bar team.

The Role

As our Bar Manager, you will take complete end-to-end ownership of the bar operations. Working closely with the Venue Manager and Head Chef, you will ensure seamless synergy between the floor and the bar while driving profitability, consistency, and a stellar workplace culture.

Key Responsibilities

Team Leadership

Recruit, onboard, roster, and mentor a high-calibre team of cocktail bartenders and bar backs, fostering a positive and motivating work workplace.

Beverage Curation

Design, implement, and maintain a premium, seasonal cocktail program and curated wine/beer list that aligns with our culinary direction.

Operational Excellence

Manage day-to-day bar service,



ensuring strict adherence to cleanliness, speed, and standard operational procedures.

Financial Management

Drive beverage sales, manage stock control, minimize wastage, complete regular inventory audits, and meet Cost of Goods Sold (COGS) and Gross Profit (GP) targets.

Compliance

Ensure absolute compliance with the NSW Liquor Act, Responsible Service of Alcohol (RSA) guidelines, and standard OHS workplace practices.

What We’re Looking For

Proven experience as a Bar Manager or Senior Assistant Bar Manager in a premium, fast-paced restaurant or cocktail venue.

Advanced mixology skills with a deep understanding of spirits, classic cocktails, current beverage trends, and wine curation.

Strong business acumen with demonstrated experience managing stock, optimizing GP margins, and optimizing labour costs.

Exceptional leadership and communication skills—a mentor who leads from the front on busy weekend services.

Valid NSW RSA competency card.
