Role Description

The Head Chef is a full-time, on-site role based at Candelori’s Restaurant & Bar in the Greater Sydney Area. This position leads the kitchen team in planning, preparing, and presenting the full menu, ensuring consistent quality across wood-fired pizzas, handcrafted pastas, specialty meats, and other Italian dishes. The Head Chef designs and updates menus, oversees food ordering and inventory, and maintains food safety, hygiene, and compliance with applicable regulations. Daily responsibilities include supervising kitchen staff, coordinating service, managing prep schedules, and controlling food and labor costs.



The role also collaborates closely with management and front-of-house teams to deliver a seamless guest experience and support special events and functions.

Qualifications

- Extensive experience as a Head Chef or Senior Chef in a high-volume, premium dining setting, ideally with a focus on Italian cuisine.
- Proficiency in menu development, food presentation, and quality control, including experience with wood-fired ovens, fresh pasta, and specialty meat preparation.
- Strong leadership and team management skills, with the ability to train, mentor, roster, and motivate diverse kitchen staff.
- Solid understanding of food safety standards, kitchen hygiene, stock management, and cost control, including ordering, wastage reduction, and budgeting.
- Ability to work efficiently in a fast-paced environment, coordinate multiple stations, and maintain calm, professional communication during service.
- Culinary qualification or trade certification and relevant food safety certifications (e.g., Food Safety Supervisor) are highly desirable.
- Flexibility to work evenings, weekends, and public holidays as required in a busy restaurant setting.
- Strong collaboration skills and commitment to delivering an exceptional guest experience in partnership with front-of-house and management teams.
