Two levels up at The Waterside Hotel — our biggest pub redevelopment yet — sits Past/Port Dining, our South-East Asian restaurant. Led by Executive Chef Sarah Chan, the menu draws on her Sarawakian roots and years spent cooking across Malaysia, Singapore, Thailand, Vietnam and Indonesia — right down to a laksa so personal it only shows up at lunch.

We are looking for a

Senior Sous Chef

ready to bring their leadership to a tight-knit, talented brigade with real opportunity to grow into a more senior role as you make yourself at home.

The Role Working closely with our Executive Chef, you'll play a key role in running service, maintaining consistency and supporting the growth of the wider team.

What You'll Do

Lead and inspire a high-performing kitchen team, while working closely with front of house

Support menu innovation and ensure consistency across every service

Train, mentor and develop junior staff, building a genuine culture of growth

Champion a respectful, team-first environment in and out of service

Own operational discipline — food cost,



portion control, prep scheduling, waste management

Maintain supplier relationships and ensure compliance with WHS and food safety standards

What You Bring

Minimum 2 years' experience as a Sous Chef or higher in South-East Asian dining

Solid coaching and communication skills

A creative approach grounded in operational excellence

Solid business acumen — proven ability to manage cost, ordering, budgets, compliance and supplier relationships

A genuine commitment to cleanliness, safety and consistently high standards
