Key responsibilities

Recruiting, training and developing FOH staff

Building and managing weekly rosters

Managing labour and keeping staffing levels efficient

Maintaining consistently high service standards

Managing bookings and the guest experience

Handling customer feedback professionally

Managing opening and closing procedures

Cash handling and end-of-day procedures

Stock control and beverage ordering

About you

Previous restaurant management or senior FOH experience

Solid leadership skills

Excellent communication and people skills

Experience training and managing hospitality teams

An understanding of rostering, labour costs and restaurant profitability

Confidence running a busy service

Strong attention to detail

A current Victorian RSA

Good knowledge of food, wine and hospitality

The ability to deal with problems calmly and make decisions

Real responsibility and autonomy

You'll take ownership of the front of house operation at Kaprica, an independent Italian eatery located on Grattan Street in Carlton. You'll be a hands‑on restaurant manager who enjoys being on the floor, knows their regulars, develops their staff and understands how to make a busy restaurant run properly.
