TOKI Bistro & Bar is a French-Asian restaurant located opposite Victoria Cross Station, North Sydney. It received an AGFG Chef Hat Award in 2026. TOKI North Sydney Pty Ltd is a growing hospitality business with a strong commitment to quality and service.

The Role The Company is seeking an experienced Bar Manager to lead and develop the bar operation, including the bar team, beverage program, systems and procedures.

Key Responsibilities

- Lead, train and roster the bar team
- Manage the cocktail, wine and spirits offering
- Oversee stock control, ordering and beverage cost management
- Develop and maintain operating procedures, checklists and workflows
- Ensure compliance with responsible service of alcohol requirements and the venue's liquor licence conditions

Selection Criteria

Essential

- At least three years' experience in a senior bartender or bar management role
- Sound knowledge of cocktails, wine and spirits
- Experience in stock control, ordering and cost management
- Demonstrated ability to train and lead a team
- Strong organisational skills and attention to detail
- Current NSW RSA competency card
- Availability to work evenings and weekends
- Valid Australian work rights or, for the full-time position, eligibility for employer sponsorship

Desirable:
- Experience with point-of-sale systems, SevenRooms and Slack
- Interest in, or experience with, technology to improve daily operations, including AI tools

Remuneration and Perks

- Full-time:



annual salary of $80,000 plus superannuation, for 38 ordinary hours per week plus reasonable additional hours in accordance with the National Employment Standards
- Part-time: salary calculated pro rata, with regular hours agreed in writing before commencement
- Eligibility to take part in the venue's tip distribution
- Staff meals and complimentary coffee
- Staff discounts across the group's venues

Visa Sponsorship Visa sponsorship may be offered for the full-time position at the Company's discretion, subject to the candidate's eligibility and Department of Home Affairs approval. The Company does not charge, and will not accept, any fee or payment for recruitment or visa sponsorship.
