Head Chef
Seafood Specialist | Head Chef Leadership Role Mures is looking for an experienced Head Chef with exceptional fish and seafood knowledgeto lead our Lower Deck kitchen and Fish Mongers operation on Hobart's waterfront.
We are not simply looking for a solid chef who enjoys cooking seafood.
We are looking for someone who genuinely knows fish.
Our hook-to-plate philosophy means this position has a connection to seafood that few Head Chef roles can offer. You will have first access to the freshest Australian and locally caught seafood, to showcase within the restaurant and for guests to take home and enjoy.
The role:
You will take full ownership of food quality, COGS, labour, stock, yield, wastage and operational performance while building a capable and engaged team. You'll be visible and hands-on, maintaining exceptional cooking standards and developing the seafood knowledge of both our kitchen and Fish Mongers teams.
You will consistently demonstrate your seafood knowledge and skills through:
- identifying fish and seafood species and understanding their characteristics, seasonality and best uses;
- assessing freshness, quality and suitability for sale or service;
- whole-fish preparation, breakdown and utilisation;
- fish handling, storage, rotation and cold-chain management;
- understanding yield, portioning and the commercial value of different cuts and species;
- selecting the right cooking technique for different fish and seafood;
- making intelligent decisions about the day's catch and product allocation;
- promoting lesser-known, seasonal and premium species;
- sharing your knowledge and developing genuine seafood capability within the team.
You will be responsible for ensuring that only seafood meeting Mures freshness and quality standards reaches our guests.
About you
You will ideally have:
- significant experience as a Head Chef in a high-volume environment;
- advanced fish and seafood knowledge gained through genuine hands-on experience;
- exceptional fish preparation and cookery skills;
- a strong understanding of freshness, quality, yield and whole-fish utilisation;
- experience managing food COGS, labour, stock and menu costing;
- strong commercial awareness and an ability to turn great produce into profitable sales;
- proven experience leading, coaching and developing teams; and
