You're an experienced Sous Chef or a seriously strong Chef de Partie ready to step up.
High volume kitchens are where you do your best work.
You know how to lead a crew, run a excellent service and keep standards high when the pressure hits.
You understand the numbers behind a successful kitchen, not just what happens over the pass.
Most importantly, you're hands on, switched on and lead from the front.
