One of our clients The Rise Pizzeria Café, based in Narre Warren North, VIC is a well-known Italian restaurant.
Currently, they have a vacancy for experience, skilled and full-time Chef to join the restaurant.
About Role: The Chef will be responsible for the preparation, cooking, and presentation of high-quality meals and for supporting the effective operation of the restaurant's kitchen.
The key duties and responsibilities include: Duties and Responsibilities • Prepare, cook, and present a range of dishes for regular restaurant service, functions, and special events in accordance with established recipes, quality standards, and presentation requirements.
• Prepare and cook Italian-style dishes, including pasta, sauces, meat and seafood dishes, appetisers, wood-fired menu items, and other dishes offered by the restaurant.
• Examine food and ingredients prior to preparation and cooking to ensure appropriate quality, freshness, and suitability.
• Work closely with the Head Chef and Restaurant Manager to plan, develop, and review menus and recipes, taking into consideration seasonal availability of ingredients, customer demand, expected patron numbers, portion sizes and menu pricing.
• Assist in developing new dishes, seasonal menu items and restaurant specials while maintaining the style and quality standards of the restaurant.
• Estimate food and ingredient requirements and assist in determining food and labour costs associated with menu items.
• Monitor the quality of dishes at all stages of preparation and presentation to ensure consistency in taste, portion size, appearance, and overall restaurant standards.
• Check the quantity and quality of food and ingredients received from suppliers and ensure deliveries meet the restaurant's required specifications and quality standards.
• Monitor stock levels and food usage and maintain appropriate inventory levels to support uninterrupted kitchen operations while minimising unnecessary wastage.
• Order food, ingredients and kitchen supplies as required and coordinate with approved suppliers to maintain adequate stock levels.
• Ensure food products are appropriately stored, labelled and rotated and that temperature controls and food-storage requirements are properly maintained.
• Regulate temperatures of ovens, grills, cooktops, fryers, and other cooking equipment to ensure food is cooked safely and to the required standard.
• Prepare and cook meals to accommodate customer dietary requirements, allergies and special requests while observing appropriate food-safety and cross-contamination procedures.
• Demonstrate appropriate cooking techniques and provide guidance to cooks and other kitchen employees in food preparation, cooking, garnishing, portioning, and presentation.
• Supervise and coordinate the activities of cooks, kitchen hands and other kitchen staff during food preparation and restaurant service.
• Train and mentor junior kitchen employees in appropriate cooking techniques, recipes, food-handling procedures, hygiene requirements, and restaurant standards.
• Allocate and coordinate food-preparation activities during service to ensure meals are prepared efficiently and within appropriate service times.
• Monitor and enforce food safety, hygiene,
and sanitation procedures throughout the kitchen to ensure compliance with applicable standards and regulations.
• Inspect kitchen equipment, food-preparation areas, and storage areas to ensure they are maintained in a clean, safe, and hygienic condition.
• Maintain high standards of kitchen cleanliness and ensure appropriate cleaning and sanitation procedures are consistently followed by kitchen staff.
• Plan and coordinate food preparation requirements for functions, special events, group bookings, and periods of increased customer demand.
• Monitor portion control, ingredient usage and food wastage and implement appropriate measures to maintain consistency and control food costs.
• Assist with the development and implementation of kitchen procedures, preparation schedules, recipes, and quality-control standards.
• Identify kitchen equipment requiring maintenance, repair or replacement and discuss equipment requirements and purchases with the Head Chef and Restaurant Manager.
• Coordinate with front-of-house employees and restaurant management to ensure efficient service and promptly resolve issues relating to food quality, timing, or customer requirements.
• Maintain detailed knowledge of the restaurant's menu, ingredients, recipes, cooking techniques, and presentation standards and ensure these standards are consistently maintained.
• Where required, participate in the selection, training, and performance supervision of kitchen employees to maintain an appropriately skilled and productive kitchen team.
Eligibility Requirements: • Minimum of 3 years of experience as chef • Diploma in relevant field Salary - $80,000 per year plus super Only eligible and shortlisted applicants will be contacted.
