Republic Economica is South Yarra's late-night institution - a European bar and restaurant running daily DJs, a loyal crowd, and a reputation for doing things properly.
Revenue has more than doubled over two years.
We're not in start-up mode anymore.
We're scaling with discipline.
We're looking for a Venue Manager who has already done this job somewhere valuable, knows what great looks like on the floor, and can hold a team to that standard every night of the week.
What You'll Own
Day-to-day floor operations - service, atmosphere, standards, pace
Labour scheduling and roster management against weekly targets
COGS oversight in partnership with the BOH lead - weekly invoice review, waste reduction
Weekly reporting to the Operations Director - revenue, labour %, issues, priorities
Supplier relationships and stock management
Opening and closing standards, venue presentation, and compliance
What We're Looking For




3+ years in a senior venue management or AGM role in a high-volume bar/restaurant
Proven track record holding labour below 38% in a late-night environment
Financially literate - you can read a P&L; and know what levers to pull
Strong people manager - direct, fair, able to have hard conversations
Experience managing DJs, late-night operations, and liquor licence compliance
RSA and Food Safety Supervisor certification
