Our cocktail program is intentionally designed around rotating, theme-led menus exploring concepts such as alchemy, fermentation, and native botanicals. Ingredients are thoughtfully sourced from the estate and trusted local producers. The department is led by Food & Beverage DirectorTanguy Charbonnet (Australian Bartender of the Year ****), the program is built on deep product knowledge, ongoing training, and a commitment to sustainability in every detail.

We are seeking an experienced and motivatedAssistant Bar Managerto support the leadership of Flaggerdoot and help deliver an exceptional, world-class guest experience.

Key responsibilities:

Lead and deliver exceptional, personalised guest experiences
n
Support daily bar operations and service execution
n
Assist with stock ordering, inventory management and cost control
n
Manage guest requests and resolve service issues promptly
n
Ensure compliance with service standards, RSA and venue policies
n




Collaborate across departments to ensure seamless guest journeys
n
Lead by example with professionalism, energy and humility
n
n
About You:
n
n
You are a confident hospitality professional who thrives in high-end, rapid-paced environments and takes pride in delivering memorable guest experiences.
n
Previous experience in a bar supervisory or assistant manager role
n
Strong knowledge of spirits, cocktails and contemporary bar techniques
n
Proven ability to lead, motivate and develop a team
n
A genuine passion for guest experience and attention to detail
n
Flexible availability, including weekends and public holidays
n
