This is a bakery role located on Lord Howe Island, involving preparing and baking fresh breads, muffins and other bakery products for the following day. You will start work in the evening/night to ensure products are ready for breakfast and service. The role involves adapting to a small, remote hospitality operation where flexibility and teamwork are particularly significant.

Key responsibilities

Preparing and baking fresh breads, muffins and other bakery products for the following day
n
Starting work in the evening/night to ensure products are ready for breakfast and service
n
Mixing, shaping, proving and baking dough according to recipes and production requirements
n
Preparing doughs and components in advance and managing
fermentation/proofing
times
n




Maintaining consistent quality, presentation and portion sizes
n
Keeping the bakery/kitchen clean, organised and compliant with food-safety requirements
n
Monitoring stock levels and helping management with
ordering/preparation
of ingredients
n
Working independently during overnight hours while communicating with the
kitchen/hospitality
team
n
Following workplace health and safety procedures
n

Previous commercial baking experience

Good time management
