Target Business Services Location: 1 Bests Place, Burra SA **** Salary: $81,000plus 12 % super Position: Full time, permanent Our client, AFS Consulting Group Pty Ltd, operates the Royal Exchange Hotel Burra, a licensed hotel located in the historic township of Burra, South Australia.
The hotel provides bar and dining services, accommodation and function facilities for the local community and visitors to the region.
The business is committed to maintaining quality food and beverage standards while providing a welcoming and consistent hospitality experience across its dining, bar and functions operations.
The Royal Exchange Hotel Burra is seeking an experienced and suitably qualified Chef to lead food preparation and kitchen operations.
The Chef will be responsible for planning menus, costing dishes, preparing and presenting food, maintaining food quality and directing the Cook and other kitchen staff.
The Chef will work closely with the Restaurant Manager on menu planning, pricing, daily specials and service requirements.
The role is central to maintaining consistent food standards, controlling food costs and ensuring that the kitchen operates safely and efficiently across regular dining service, bar meals and functions.
Qualifications and Experience -A trade qualification in commercial cookery, such as a Certificate III or Certificate IV in Commercial Cookery, or an equivalent qualification at a comparable level, or substantial equivalent industry experience at chef level.
-Minimum three years' directly relevant full-time experience in a hotel, restaurant, cafe or comparable commercial kitchen, including experience in menu planning, dish costing and directing kitchen staff.
-Demonstrated experience supervising, training and directing cooks and other kitchen staff.
Key Responsibilities -Plan and develop menus for the dining room, bar meals and functions, taking into account seasonal produce, customer demand and food costs, in consultation with the Restaurant Manager.
-Cost individual dishes and provide menu pricing recommendations while monitoring food costs and adjusting preparation practices where required.
-Direct and coordinate the Cook and other kitchen staff during food preparation and service to ensure efficient workflow and consistent output.
-Prepare, season, cook and present dishes to the venue's required standards, personally undertaking complex and specialised food preparation where necessary.
-Order food ingredients and kitchen supplies from approved suppliers, inspect deliveries for quality and monitor stock levels to minimise wastage.
-Maintain appropriate food storage, stock rotation and handling procedures to protect food quality and safety.
-Establish and enforce kitchen food safety, hygiene and cleaning standards in accordance with applicable South Australian requirements and the venue's food safety procedures.
-Train and guide the Cook and other kitchen staff in preparation techniques, presentation standards,
safe work practices and kitchen procedures.
-Plan and cost menus for private functions, events and other special bookings held at the hotel.
-Monitor the condition and safe operation of kitchen equipment and report maintenance or repair requirements to management.
-Check incoming deliveries of fresh and prepared food to ensure they meet the hotel's required quality and quantity standards.
-Comply with work health and safety requirements, including the safe operation of commercial kitchen equipment, manual handling and workplace practices.
-Liaise with the Cafe or Restaurant Manager regarding daily specials, menu changes, plating standards and service requirements.
Skills and Attributes -Strong commercial cooking and kitchen supervision experience.
-Proven ability to cost dishes and monitor food costs against budget.
-Strong knowledge of commercial food preparation, menu planning and seasonal produce.
-Demonstrated leadership skills and the ability to train and direct kitchen staff.
-Strong knowledge of food preparation, cooking methods and presentation standards.
-Ability to maintain consistent food quality during busy dining services and functions.
-Ability to work efficiently in a rapid-paced hospitality environment while maintaining quality and safety standards.
The successful candidate will be an experienced hospitality professional who can take responsibility for the day-to-day culinary standards of the Royal Exchange Hotel Burra, while working collaboratively with management and the wider kitchen team.
