About The Role
We are currently seeking a motivated and passionate Chef de Partie to join our hospitality team at St Lucia.
This is an exciting opportunity for someone looking to continue developing their culinary career within a fast-paced and collaborative kitchen environment.
Reporting to the Head Chef, the Chef de Partie plays an important role in the daily operation of a high-performing commercial kitchen. This position contributes to delivering quality, consistent food and efficient kitchen operations, while maintaining high standards of food safety, hygiene, and operational excellence.
While this is a casual role, there is the opportunity to work up to 38 hours during semester peaks, with hours for this role being Monday, Thursday, and Friday, depending on business requirements.
Key Responsibilities
Service & Food Production
- Prepare and present food to recipe, menu and portion standards
- Support consistent, efficient kitchen service and mise en place
- Maintain a clean, organised workstation and follow portion control to minimise waste
- Support section operations with a degree of autonomy, and mentor junior kitchen staff
Food Safety & Compliance
- Maintain food safety, hygiene and WHS standards in line with SOPs and UQU policy
- Complete food safety records accurately and report concerns, faults or incidents promptly
Stock & Cost Control
- Monitor stock rotation, quality and use-by dates; support stocktakes
- Report shortages promptly and use ingredients/resources cost-effectively
Team & Operations
- Support the Chef and kitchen team with daily operations and ad hoc duties
- Contribute to a positive team environment and participate in training/meetings
- Previous experience leading small teams is highly regarded
About You
We’re after someone who has:
A Certificate III in Commercial Cookery or equivalent experience
Current Food Safety certification, or willingness to obtain
1–2 years’ experience in a commercial kitchen environment
Experience leading or supervising a team is highly regarded
Sound knowledge of food preparation, food safety and safe food handling practices
Ability to work efficiently in a fast-paced team environment while maintaining quality standards
Strong communication, teamwork and time management skills
Has knowledge of stock control, food presentation standards and kitchen WHS requirements
