About the Roles

As part of the Vito’s leadership team, you’ll work closely with the General Manager and senior leadership to establish the culture, standards and service style of the restaurant from day one.

Depending on your experience and area of expertise, opportunities exist across:

- Restaurant Management
- Assistant Restaurant Management
- Venue Sommelier
- Bar Management
- Maître D

What You’ll Do

- Maintain a strong, hands-on presence on the floor and lead from the front.
- Help establish and maintain Vito’s service, hospitality and operational standards.
- Lead, train and develop a high-performing team.
- Run busy services confidently and make strong decisions under pressure.




- Build genuine relationships with guests and create memorable experiences.
- Work collaboratively across the restaurant, bar and wine teams.
- Take ownership of your area while contributing to the success of the venue as a whole.
- Bring energy, organisation and attention to detail to every service.

About You

- Strong leadership experience within quality, high-volume restaurants or hospitality venues.
- A hands-on leader who genuinely enjoys being on the floor.
- Passionate about hospitality, food, wine and restaurants.
- Confident leading, training and motivating teams.
- Strong communication, organisation and attention to detail.
- Calm and decisive in busy service environments.
- Someone who takes ownership and leads by example.
- Genuine, warm and professional with both guests and your team.
- Current NSW RSA or ability to obtain prior to commencement.
