Quality Control Officer – Food Manufacturing

Ribs & Roast | Western Sydney NSW
Full-Time | Monday–Friday | 5:00am–2:30pm | On-Site

Please note: This position requires a consistent 5:00am start, Monday to Friday. The early start is an essential requirement of the role.

About Us

Ribs & Roast was founded through the amalgamation of The Butcher & The Chef. Together, our directors Paul O’Shea (The Butcher) and Tony Italiano (The Chef) mastered the coming together of fresh meat and the science of cooking and, as a result, created the range of niche sous vide products we manufacture today.

We are an Australian-owned food manufacturer specialising in premium sous vide meat products, supplying customers across foodservice, retail and wholesale markets.

At Ribs & Roast, everything we do comes down to one simple but powerful word: CARE.

CARE is at the heart of our business and is supported by our four pillars of belief:

Food Safety | Food Quality | Customer | Each Other

These values guide how we work, how we make decisions and how we support our team, customers and partners.

About the Role

We are looking for a confident, hands‑on and proactive Quality Control Officer to join our Food Safety & Quality team.

This is predominantly a QC-focused role with a strong presence on the production floor. You will work closely with our Production and Operations teams to ensure our products, processes and facility consistently meet food safety, quality, regulatory and customer requirements.

While Quality Control will be your primary focus, the position will also support our broader Quality Assurance function, giving you exposure to documentation, corrective actions, investigations, internal audits, traceability, compliance and continuous improvement.

Reporting to the Food Safety & Quality Manager, you will play an important role in maintaining our standards and continuing to strengthen our food safety and quality culture across the business.

This is not a desk-based quality role. We want someone who enjoys being on the production floor, working with people, identifying issues and taking ownership of the standards they're responsible for.

The Hours – Please Read

This is a full time, on-site position, Monday to Friday, 5:00am–2:30pm, with two 30-minute breaks each day.

The 5:00am start is an essential requirement of this position.

Our Production team commences at 5:30am , so our QC Officer needs to be on-site beforehand to complete pre‑operational inspections and verification activities and ensure the facility is ready for production to commence.

Starting at 5:00am also means you'll be involved from pre-start through to the afternoon, providing strong QC coverage across the production day.

We know 5:00am is an early start, so we want candidates to be clear on the hours from the outset. In return, you'll have a consistent Monday‑to‑Friday roster,

no rotating shifts and a 2:30pm finish every day.

Key Responsibilities

Your responsibilities will include:

- Conducting routine food safety and quality checks throughout production.

- Completing daily pre‑operational and hygiene inspections prior to the 5:30am production start.

- Monitoring GMP and food safety practices across the facility.

- Verifying product specifications, weights, temperatures, packaging, labelling and presentation.

- Monitoring and verifying CCPs, QCPs and other production controls.

- Reviewing production and food safety records for accuracy and completeness.

- Identifying, documenting and escalating non‑conforming products, processes or practices.

- Assisting with product holds, releases and corrective actions.

- Supporting traceability and mock recall activities.

- Conducting environmental, product and other sampling as required.

- Assisting with customer complaints and internal investigations.

- Supporting root cause analysis and corrective and preventative actions.

- Assisting with internal audits and verification activities.

- Supporting the maintenance of HACCP, SQF and other food safety and quality documentation.

- Working closely with Production to identify and implement opportunities for improvement.

- Providing practical food safety and quality guidance to employees on the production floor.

- Supporting training and reinforcement of GMP, food safety and quality requirements.

- Assisting the Food Safety & Quality Manager with broader QA, compliance and continuous improvement activities as required.

About You

Technical knowledge is important, but the right personality and approach are equally important to us.

We're looking for someone who is confident, practical and not afraid to speak up .

Quality Control is more than completing checks and paperwork. You'll need the confidence to communicate expectations clearly, question something when it doesn't look right and stand by food safety and quality requirements, even when Production is busy and there are competing priorities.

You will be approachable and collaborative, but also firm when you need to be. You should be able to build strong working relationships with the team without being afraid to have a difficult conversation, challenge a decision or escalat

We want someone who has the confidence to say “this isn't right”, explain why and follow the issue through to resolution rather than allowing standards to slip.

- Previous QC,

QA or food safety experience within food manufacturing.

- A good understanding of GMP, HACCP and food safety principles.

- Confidence to speak up, challenge decisions and hold the line on food safety and quality requirements.

- Strong communication skills and the ability to communicate effectively with people at all levels of the business.

- The ability to remain professional and assertive when dealing with pushback or competing production priorities.

- Sound judgement and confidence in making decisions within your area of responsibility.

- A willingness to take ownership of issues rather than simply identifying and passing them on.

- Strong attention to detail and record-keeping skills.

- A practical, solutions-focused approach to problems.

- The ability to work independently while remaining a collaborative member of the wider team.

- Good computer literacy and confidence working with electronic records and documentation.

- The ability and willingness to work within a chilled food manufacturing environment.

- Reliability and the ability to consistently commence work on-site at 5:00am, Monday to Friday.

Experience with SQF, meat manufacturing, sous vide production or export-regulated food manufacturing would be highly regarded but is not essential.

Most importantly, we're looking for someone with the right attitude and strength of character – someone who takes pride in maintaining standards, communicates with confidence and understands that when it comes to food safety and quality, doing the right thing isn't negotiable.

What We Offer

At Ribs & Roast, we believe Food Safety and Food Quality are everyone's responsibility – not just the Quality team's.

You'll be joining a supportive, collaborative and team-focused workplace where you'll have the opportunity to work across both Quality Control and Quality Assurance, develop your technical knowledge and gain exposure to a broad range of food manufacturing and compliance activities.

We offer:

- Consistent Monday–Friday hours, 5:00am–2:30pm – no rotating roster.

- Two 30-minute breaks each day.

- Access to a well-equipped staff kitchen, including tea, coffee, and a selection of complimentary food

- Your choice of a complimentary Ribs & Roast sous vide product each week.

- Staff discount at The Outlet, our on-site retail store.

- A stable, full-time position with an established Australian food manufacturer.

- A hands‑on role with genuine involvement across the operation.

- Exposure to both Quality Control and Quality Assurance functions.

- Comprehensive on-the-job training to support your role and professional growth.

- A supportive, collaborative and team-focused work environment.

- The opportunity to grow your food safety and quality career as the business continues to develop.
