The Grill Cook owns the grill station at Argyle House Camden, delivering the premium steaks and grilled dishes that are central to the venue's reputation for artfully plated, chef led food. Working closely with the Head Chef and Executive Chef, the Grill Cook brings steakhouse level precision, consistency and pace to à la carte service, functions and events, particularly across the venue's busy weekend and event trade.

Key responsibilities

Own and run the grill station across à la carte service, private functions and events

Cook premium cuts, steaks and grilled dishes to exact temperature, char and presentation standards

Manage grill mise en place, portioning and stock rotation for the section

Contribute to ordering and stock control for grill ingredients in liaison with the Head Chef

Work closely with the Head Chef and Executive Chef to maintain consistency and quality at the pass

Apply strong knowledge of steak cuts, cooking temperatures and grilling techniques to every dish

Support menu development input relevant to the grill section





Guide and mentor junior kitchen staff rostered to the grill station

Communicate clearly with the wider kitchen team to keep service flowing under pressure

About you

Proven experience as a Grill Cook or Grill Chef, ideally gained within a dedicated steakhouse group

Strong knowledge of steak cuts, cooking temperatures and grilling techniques

Ability to perform with speed and precision in a high volume, fast paced kitchen

Availability and willingness to work weekends, evenings and events, in line with the venue's trading pattern

Sound understanding of food safety and protected food handling practices

Certificate III in Commercial Cookery or equivalent trade qualification (desirable)

Experience working in a premium or function driven hospitality venue (desirable)

Experience mentoring or guiding junior kitchen staff (desirable)

Physically able to work at a hot, high intensity grill station for extended periods, including standing, lifting and repetitive movement
