Republic Economica is South Yarra's late-night institution - a European bar and restaurant running daily DJs, a loyal crowd, and a reputation for doing things properly. Revenue has more than doubled over two years. We're not in start-up mode anymore. We're scaling with discipline.

We're looking for a Venue Manager who has already done this job somewhere good, knows what great looks like on the floor, and can hold a team to that standard every night of the week.

What You'll Own

n

n
- Day-to-day floor operations - service, atmosphere, standards, pace
n
- Labour scheduling and roster management against weekly targets
n
- COGS oversight in partnership with the BOH lead - weekly invoice review, waste reduction
n
- Weekly reporting to the Operations Director - revenue, labour %, issues, priorities
n
- Supplier relationships and stock management
n
- Opening and closing standards, venue presentation, and compliance
n

What We're Looking For

n

n




- 3+ years in a senior venue management or AGM role in a high-volume bar/restaurant
n
- Proven track record holding labour below 38% in a late-night environment
n
- Financially literate - you can read a P&L; and know what levers to pull
n
- Solid people manager - direct, fair, able to have hard conversations
n
- Experience managing DJs, late-night operations, and liquor licence compliance
n
- RSA and Food Safety Supervisor certification
n
