Proudly serving the Willawarrin community, BB Waterhole Pty Ltd trading as Willawarrin Hotel is a Heritage-listed country establishment with deep roots in Australian history. Situated just 20 minutes west of Kempsey, the hotel has welcomed locals and travellers alike, offering an authentic bush-pub experience while serving the best beer in the Macleay Valley. It is also known as a favorite local venue located halfway to the old homestead of country music legend Slim Dusty.

Recognised for its heritage and community significance, the Willawarrin Hotel offers a five-room accommodation package alongside a bistro serving lunch from Thursday to Sunday and dinner from Wednesday to Saturday. Willawarrin Hotel is currently seeking experienced Chefs for full-time roles, offering a competitive salary of $75,000–$85,000 per annum, depending on experience. This is a great prospect to join a historic venue where quality, tradition, and great food come together.

Scope of the role:
n
n
- Facilitate the smooth operation of the kitchen in accordance with company standards.
n
- Oversee the preparation, cooking, and presentation of all culinary offerings, ensuring every dish across menus and daily specials is executed to consistently exceptional standards and showcases creativity and quality.
n
- Execute menu items consistently to standard, ensuring quality, portion control, and timely preparation in line with kitchen expectations.
n
- Accurately forecasts, conducts monthly inventories,
and manages the ordering and stock control of food supplies to ensure uninterrupted kitchen operations and cost-effective resource utilisation.
n
- Aid in the oversight of food expenses and waste management.
n
- Analyse recipes to assign menu item prices based on food, labour, and overhead costs.
n
- Determine production schedules and staff requirements necessary to ensure the timely delivery of services.
n
- Prepare food, ensuring quality with efficient time management, and hygiene protocols.
n
- Inspect supplies, equipment, and work areas to ensure conformance to established standards.
n
- Uphold the standard of the venue and maintain operational efficiency.
n
- Regularly demonstrate and practice innovative cooking techniques and the use of modern kitchen equipment, while being informed of ongoing culinary trends and continuous improvements.

- Liaises with front-of-house staff to streamline service delivery and maintain seamless coordination between kitchen and dining operations.
n
- Oversees and enforces strict compliance with food safety, sanitation, and occupational health and safety regulations, ensuring all kitchen operations meet mandatory standards.

To be considered for this role, you should:
n
n
- Hold Certificates III & IV in Commercial Cookery from Australia
n
- Have at least 2 years of work experience as a Chef in a similar cuisine
n
- Good knowledge of occupational health and safety (WHS) and HACCP.
n
- Ability to work in a team.
n
- Excellent communication skills.
n
- Be willing to relocate if you are interstate or in other cities.
